Baked Salmon with Red Potato and baked Broccoli

Baked Salmon Ingredients
¼ pound salmon (2 pcs)
¼ tsp dill
¼ cup Olive oil
½ tsp oregano
1/8 cup lemon juice
1 tsp salt
½ tsp garlic powder
½ tsp black pepper
½ cup apple cider vinegar

Directions
Preheat oven to 425 degrees
Pour ½ cup apple cider vinegar over salmon then pat dry (removes fish smell)
Mix together Olive oil, lemon juice, garlic powder, dill, oregano, salt and pepper in a small bowl
Place 2 pieces of aluminum foil on a baking tray (large enough to cover fish), pour some of the
mix onto foil.
Place the the fish skin side down on foil, pour rest if mix onto fish.
Fold foil loosely over top of fish
Bake for 12 minutes

Red Potato Ingredients
10-12 red potatoes
1 tsp salt
½ cup olive oil
½ tsp black pepper

Directions
Soak potatoes in cold water for 10 minutes
Pour out water, dice potatoes into ¼-1/2 in pieces
Place into pot with cold water, enough water to cover potatoes
Boil covered for 15 minutes, uncover, stir and let boil another 6-8 minutes
Preheat oven to 425 degrees
Drain water, add olive oil, salt and pepper to pot, stir together, spread evenly
on a baking tray lined with parchment paper
Bake for 30 minutes, toss around, bake an additional 20 minutes, toss again and bake another
20 minutes

Baked Broccoli Ingredients
2 heads of broccoli
1 tsp salt
½ cup olive oil
½ tsp red pepper flakes

Directions
Preheat oven to 425 degrees
Wash broccoli, cut off 1” of end (discard), slice lengthwise and florets (use stems)
Mix olive oil salt and red pepper flakes, pour over broccoli and toss together
Place on baking sheet and bake for 15 minutes, toss and bake another 7 minutes
