Delicious Shrimp and Cauliflower Recipe

Shrimp and Cauliflower Ingredients
14 medium Shrimp (cleaned & deveined) 1 cauliflower
1 bunch scallions 4 egg whites
1 Tbsp olive oil 2 tsp low sodium soy sauce
Black pepper 1 Tbsp fresh garlic
1 Tbsp fresh ginger

Directions
Cut cauliflower into small pieces and place into a food processor, mix
Wash scallions and chop into ¼” pieces
Grate ginger, chop garlic
Add 1 tbsp olive oil, garlic and ginger to frying pan turn heat to medium, stir 2-3 minutes
Add shrimp, sprinkle with salt and pepper to taste, constantly stirring
Add scallions, stirring approx. 5-7 minutes
Remove shrimp from pan and place onto a plate (do not clean frying pan)
Separate egg whites from yolks, discard yolks, whip egg whites and scramble in the frying pan
over medium-high heat
Add cooked egg whites to shrimp
In the same frying pan add the cauliflower and 2 tsp soy sauce, stir for 2 minutes, add shrimp
and egg whites to cauliflower, mix together and cook over low-med heat for 2 minutes
Serve and enjoy.
