How to Make the Best Lentil Soup

Ingredients
1 lb dry lentils
8 cups water
½ tsp dry basil
1 ½ tsp salt
2 cups chopped tomatoes
3 bay leaves
2 large Onions
¼ tsp thyme
3 Tbs Olive Oil
½ tsp black pepper
1 Tbsp tomato paste

Chop onions, place into a large pot or dutch oven
Add 3 Tbs Olive oil, sautee for 5-7 min over med heat and stir every 2 minutes
While onions cook, rinse lentils in cold water and set aside
Add 2 cups chopped tomatoes to onions and cook for 5 minutes
Add lentils, stir. Add basil, thyme, black pepper, 12 cups of water then tomato paste and stir
Add bay leaves and bring to a boil.
After it boils, lower heat to simmer for 45 min uncovered stirring occasionally
After 45 minutes add salt cover and cook for an add’l 15 min.
Enjoy!
You can add more salt and pepper to your liking.
