Tofu With Spinach by Chef Steve

This meal, just once a week, will make you healthier.
Ingredients
16 oz extra firm tofu
Dry Thyme
Olive Oil
Garlic Powder
Dry Parsley
Dry Basil
Dry Oregano
8 cups fresh spinach
Salt
3 cloves garlic
Pepper

Cut Tofu into triangles and place in a strainer to drain excess water (there should be 4 triangle pieces)
Coarsely chop garlic cloves while tofu dries
Wash spinach out in strainer and let drain
Pat dry tofu
Brush tofu with olive oil, sprinkle with oregano, parsley, thyme, pepper and salt
Flip over tofu and repeat on the other side
Add 2 Tbs olive oil to frying pan and heat over med-hi heat
When oil is hot add tofu and cook for 5 minutes, flip tofu over and cook over medium heat for 3 minutes longer
Remove tofu from frying pan and place on the side
Pour excess oil out from frying pan and wipe down with paper towel
Place spinach on frying pan then add garlic then add 1 Tbsp olive oil
Cook for 3 min then add tofu on top of spinach
Cook for an additional 3 minutes on low
Serve and enjoy
